Esablished in 1977 Casita Gerardo's was built ground up by Felipe & Celia Morales in Midland,Tx. Gerardo's  originally had a capacity of only 20 customers, the staff consisted of Cindy, Jerry, and Novert. Felipe & Celia's Kids. In 1997 Jerry & Meredith Morales reopened the restaurant and expanded the restaurant to serve approximately 300 people everyday! With a total capacity of 120 people at one time.
